For those who don’t know what daifuku is, it’s a mochi (pounded rice cake) ball with a filling stuffed in it. The mochi is usually bland, soft and a little chewy and the filling ranges from various sweetened beans to custard to ice cream.
What I have is a strawberry flavored rice cake “kubota” ichigo daifuku. They are a Japanese snack made with sugar, rice flour, milk, gelatin, eggs, corn syrup, strawberry sauce and two or three other ingredients that add color to the sweet treat. When you open a packet, you don’t smell anything but once you take a bite, the strawberry scent waffles to your nostrils.
The rice cake is a light pink, lightly cover in a flour-like substance, which helps it from sticking to the packaging, especially on hots days. It’s very soft, smooth and squishy. Inside the treat it is filled with a layer of marshmellow cream and in the center is a strawberry jelly. This comes in different flavors — melon, orange, green tea, pudding and many others. I’ve only tried the strawberry and I liked it a lot. It’s sweet but not over powering. Surprising enough, my mother liked it and she’s the queen of “I hate sweet stuff”.
I would definitely recommend trying this snack out if you ever see it. I got this at an anime convention and I think next time I will get the melon.
